Sushi Comes To Bear Mountain Resort

Victoria, BC -- Bears love fresh wild fish so it comes as no surprise that sushi has arrived at Bear Mountain Resort.

Kuma, the name for the new 60-seat sushi restaurant, located in the original clubhouse building, means “bear” in Japanese. Under the direction of Executive Chef Iain Rennie, who recently took over responsibility for the full suite of food and beverage operations at Bear Mountain Resort, Kuma is ready to rock & “sushi roll” the top of the mountain.

Kuma is a sleek modern room fashioned in bright vivid colours.  Transparent plexi-glass orange tables and countertops are surrounded by burgundy walls and an energetic open-view kitchen. Cosy booths are framed by what appears to be oversized chopsticks, and sleek chrome chairs beckon at the sushi bar, providing linear movement and texture to the room.  Expansive windows give diners access to the great outdoors and endless views.

Rennie lured  Kuma’s Chef Andrew Yamamoto from Vancouver to head up Kuma’s kitchen. Yamamoto learned the art of sushi making from his father, a sushi master and chef /teacher who, for twenty years, owned a string of Japanese restaurants in Vancouver long before there was one on every corner. Yamamoto’s style is cutting edge Tokyo, having recently spent two years in Japan learning the newest trends and techniques.

Rennie and Yamamoto have created a number of unique Kuma signature specials. The California Crunch is a traditional California roll of real crab and avocado, dipped in Japanese penko crumbs, deep fried to a golden bear crisp and served with one of their three flavoured dips, spinach and wasabi, spicy chili and corn and curry. As well, they have the Bear Mountain Roll, created for ex-NHL’er, Len Barrie, founder and developer of Bear Mountain. Barrie’s roll is a spicy tuna sushi roll stuffed with mixed organic greens, served with avocado and chive mayo. Kuma also offers a full complement of sashimi, tempura and teriyaki dishes.

Kuma also has plans to go down the mountain and will offer take-out and home delivery to the sushi cravers in Langford and The Highlands by the winter of 2007.

Wednesday and Thursday: 11:30 am – 2:00 pm &  5:00 pm – 9:00 pm 
Friday: 11:30 am – 2:00 pm & 5:00 pm - 10:00 pm  
Saturday: 11:30 am – 10:00 pm
Sunday: 11:30 am – 9:00 pm
Closed Monday and Tuesday
