Executive Chef Justin Weber

Born and raised in Northern Manitoba, Executive Chef Justin Weber’s interest for cooking was sparked at an early age by his mother’s Czech and German cooking. Chef Weber grew up with a love of the outdoors and an understanding that food and nature are connected.

After spending his early career immersed in cookbooks, training and eventually challenging his Red Seal, Chef Weber moved to the west coast of B.C. in 1997, first stopping in Vancouver to hone his culinary skills in small restaurants in the city before moving to Whistler and joining the team at the prestigious Fairmont Chateau Whistler. Whistler was the place where he truly started to get passionate about quality ingredients and sourcing local, where he had the opportunity to learn and grow his career and work to help host the 2010 Winter Olympics. Looking for a new challenge he moved to Victoria in 2012 and took the position of Banquet Sous Chef at the Fairmont Empress helping to manage 23,000 square feet of meeting space, over 96,000 square feet when combined with the adjoining Victoria Conference Centre. In 2016 he finally joined the ranks of The Westin Bear Mountain as Restaurant Chef.

In 2019 Chef Justin Weber earned the top spot in the kitchen as Executive Chef at The Westin Bear Mountain. His continued devotion to bringing the bounty of Vancouver Island’s farm to table dining culture to Bear Mountain means nothing but great things to come.
